Lemon Garlic Butter Beans

Full of fibre and micronutrients, beans are an easy and affordable way to add non-meat protein to your diet

Serves 2-3

This recipe is more of a loose guideline to tailor as you like! I love lots of garlic and tomatoes.

Ingredients:

1 lemon 

2-4 (or more!) cloves garlic 

1 tin butter beans (with water) 

Cherry tomatoes 

Basil  

Ricotta cheese, 1 big spoon  

Chopped spinach, a handful or two 


Method:

Sauté garlic in a pan, add butter beans and their water, tomatoes, salt and pepper and let that simmer together, 10-15 minutes depending on how crunchy you like your beans. Add a spoon of ricotta (could use cream cheese or mascarpone if you prefer), lots of lemon juice to give it that fresh, zesty taste, and the spinach. Mix that all together until the spinach just wilts, top with basil and serve with bread (I used a whole grain sourdough).
