Roasted Broccoli & Chicken
Serves 4
Ingredients:
800g diced chicken (breast or thighs)
1 tbsp oregano
1 tbsp garlic powder
1 tbsp paprika
2 tsp olive oil
600g raw broccoli cut into small pieces
2 garlic cloves chopped
salt and pepper to taste
100g chopped red onion
2 tsp olive oil
White Sauce
100g greek yogurt
80g light mayo
5 roasted garlic cloves
80g feta cheese (can you light if you prefer)
1/2 lemon
Method:
Season your chicken with oregano, garlic powder and paprika, add olive oil to a pan and cook thoroughly (you could also bake in the oven in aluminium foil or parchment, or in an airfryer).
Chop your broccoli into small pieces, and add broccoli, chopped onion, and garlic to a tray, drizzle with olive oil and toss to combine. Bake in the oven at 180 for 12-15 minutes.
For the sauce, add the yogurt, mayo, feta, roasted garlic and juice of 1/2 a lemon to a blender or food processor until smooth.
Combine your chicken and broccoli mix together, cover in sauce and mix with a spoon or spatula to combine. This would go nicely with potatoes, or whole grain bread.
