Saucy Kale and Tofu Pasta
Serves 4 (or freezes well)
Ingredients:
250g kale
3-4 roasted garlic cloves
2 tablespoons olive oil
1 lemon
2 tbsp nutritional yeast
1 block silken tofu
100g roasted mix nuts (optional)
80g pasta shape of your choice per person + pasta water
salt and pepper to taste
Method:
Blanch kale in boiling water for 2 minutes, then run under cold water
Squeeze out the water
In a food processor add kale, roasted garlic, and olive oil and blend to combine
Scrape down the sides and add tofu, yeast, lemon juice and nuts (if using them) and blend
Add salt and pepper to taste and blend again
Add your pasta into boiling salted water and cook until al dente (or to your preference!) saving a ladle or two of the starchy water to add to your sauce to loosen
Pop your pasta into a bowl, add your sauce and top with anything else you fancy - I like a bit of basil, pine nuts and parmesan cheese, chilli flakes would also go nicely - enjoy!
